Shelf stable bacon!

Re: Shelf stable bacon!

My mother is 85 and loves bacon, but dislikes cooking it. Her solution is to buy pre-cooked shelf-stable bacon from Sam's Club. I'm not sure what the brand name is, but I think it needs refridgeration after the package is open.

I imagine this also requires refrigeration after opening. Finding affordable, flavorful protein sources to create interest in meals may be a challenge. A diet of tuna fish, peanut butter and beans will probably get old real quick.

Hormel produces "Real Bacon Bits". It is canned in a little glass jar. Mine is good til 2009. And it tastes great. It is not slices, but it sure comes in handy for some things.
I put the bits into my canned soups, scrambled eggs, and on salads and potatoes. Canned soup is just awful until you add a lot of spices and the bacon bits. :(
The bacon bits are low in fat. Real bacon.
I'll probably go out and buy a few more jars in the future. It is sold in most grocery stores.

Here is their website with photos:

?We plan, we toil, we suffer -- in the hope of what?
A camel-load of idol's eyes? The title deeds of Radio City?
The empire of Asia? A trip to the moon?
No, no, no, no. Simply to wake up just in time to smell coffee and bacon and eggs.
And, again I cry, how rarely it happens!
But when it does happen -- then what a moment, what a morning, what a delight!?
