One of the best knife sharpeners that I have used is the Triangle Sharpmaker. I purchased it many years ago, and it still shows no sign of wear. It has brass guards on either side to protect the person sharpening. It features a very simple system of two stones with multiple sides to sharpen with. It will sharpen just about everything: axes, scissors, and of course knives.

Highly recommended.
