I just received a fascinating new preservation book. I have canned and frozen the bounty from my garden for years. But, I have often wondered what my ancestors did to preserve their food before we had the means to can and freeze our foods. I knew in general some of the methods but, didn't know any specific recipes. Well now I do!

Putting Food By by Janet Greene

One of my main staples for canning and freezing food. If you only wanted to buy one book on the subject, this would be my first choice.

Joy of Pickling by Linda Ziederich

This is the best book IMO for pickling produce safely. I have used it for years. I just wish I could find a really good recipe for making crunchy garlic dills and pepperincini. It does contain some fine recipes for unusual vegetables in American cuisine such as kimchee.

By the people who put out Ball Blue Book. It gives step-by-step instructions for people new to canning. It also has some nice photographs and illustrations to help clarify directions. A must if you are learning to can on your own.
