Dehydrated vegetables and freeze-dried fruits- shelf life?

I purchased bulk dehydrated vegetables and freeze-dried fruits. I vacuum packaged them in heat-sealed mylar bags with an oxygen-absorber inside. They are stored at 60 degrees F out of the light.

Can anyone provide information on an approximate shelf life for these items given an intact seal?

I have sprouts in the mylar bags. I have had them for over three years and they are just like the day I bought them. For the 10 years I have been working with preparing food storage, I have found the Mylar bags probably have a shelf life of up to 15 years. (I have a bag of brown sugar that is 7 years old, and I still cook w/ it)

The best food storage w/ the longest shelf life is the 5-gallon buckets that have a vacuum seal freeze dried, these can last up to 30 years and are rodent proof. I think the mylar bags can be chewed through by the mice.
