IMHO the article is a reminder to read and understand food labels and ingredients. If what is listed on them is a concern chose the article suggests an organic alternative. Things like rennet in cheese makes it non vegetarian. This is a surprise only for those who don't know cheese. Shellac(?) wax on organic food was something I have never noticed at my whole foods stores. The article seemed to be written for shock value. Isinglass (derived from fish), shellac (derived from a bug), rennet (a curdling agent taken from cafe stomachs) have been used for hundreds if not thousands of years. However, duck feathers (L-cysteinein) in baked goods? This one surprised me. It is a dough softener. Who knew? - AC
