Gave To Me;

Twelve Jars of the
World's Best Bean Soup Mix*

makes 20 jars of mix

1 lb. Navy Beans
1 lb. Great Northern Beans
1 lb. Pinto Beans
1 lb. Red Beans
1 lb. orange lentils
1 lb. yellow split peas
1 lb. green split peas
1 lb. blackeyed peas
1 lb. lentils
1 lb. Black beans
1 lb. small limas
1 lb. barley pearls
1 cups dried onions
2 tbs parsley
2 tbsp thyme
2 tsp celery seed
2 tbsp ground flax meal (gold is prettier)
2 tbsp chili power
2 tbsp pepper
2 tbsp garlic powder
1 tbsp baking soda
20 snack sized or smaller zip lock bags
160 beef or ham or vegetable flavored broth bouiliion cubes or equivalent in powder
20 pint gift jars - you can purchase jars from canning section or save jars that hold 2 cups. Scraps of fabric from prior projects or inexpensive remnants work well, holiday themes or metalics look great. For a county look, try red gingham type checked fabric, jute twine and place another red or contrasting checked fabric scrap thats napkin sized in the bottom of a rustic basket. Include a jar of soup, a jar of bread mix, and a small can of diced tomatoes, and a small canned ham or other food item, perhaps a sprinkle some hard candies over everything for an attractive basket sized gift.

In a large bowl, mix all beans until evenly distributed.

In a small bowl, mix all other ingredients except boiliion cubes or broth powder until evenly distributed.

Measure 2 cups beans into each jar.

Place approx 1 heaping tbsp seasoning mix into each zip lock bag, if any left over, distribute evenly among the twenty bags. Add 8 boullion cubes or amount of broth for 2 quarts soup broth (see your broth jar label) to each bag. Label each bag "Seasoning Mix" and date.

Seal each bag tightly, squeezing out as much air as possible. Place one bag on top of beans in each jar. Add an oxygen absorber if available. Cover each jar.

Secure a nicely cut scrap of fabric or similar embellishment over each cover.

Print out cooking directions on a paper, and cut into nice little fold with soup name on front, and cooking direction inside the card. On back, print your Holiday Message if desired. Nice if you can do it on coordinating colored heavy card stock. In upper left hand corner on fold, punch a small hole.

Use pretty yarn ribbon or jute twine if using a country type theme for decorations; threaded thru the hole to attach card to each jar.

Cooking instructions:

Place beans in Dutch Oven. Cover with water and soak overnight. Drain in morning, then add 2 quarts water, contents of Seasoning Packet and stir well. Simmer about 2 hours until beans are tender. Add canned meat 5-10 mins before serving and adjust seasonings. Serve with homemade bread.

Re: The Prepper's Twelve Days of Christmas.....

I didn't want to to degrade LMonty's wonderful idea, so with her permission...

As I read the gift recipe, a silly song from my childhood came to mind...

Beans, Beans
The musical fruit

The more you eat them
The more you toot

The more you toot
The better you feel
So, Eat some beans at every meal!:nuke:

Might want to add some Tums (Beano, Pepcid AC, etc.) to those pretty baskets. :smartass: A spray can of Lysol is a good prep item, too.

Ten Jars of Savory Rice Blend Mix

@ 16 one cup gift jars see first post on how to decorate and attach cooking instructions.
15 cups white rice (or for a more attractive jar, use 12 cups rice, 2 cups orange lentils or adzuki beans, and one cup wild rice. dont use beans that need soaking or cooking time over 20 mins)
30 beef or vegetable bouillion cubes or equivalant amount of broth mix
4 tbsp dried rosemary
4 tbsp dried Marjoram
4 tbsp dried Thyme
1 tbsp Tumeric
1 cup minced onion PLUS
1/2 cup dried celery
OR 2 cups dried soup veggies

Combine all ingredients and mix well. Place one cup into each gift jar and seal as in recipe in first post. Attach cooking directions.

Cooking directions:

In a medium saucepan, bring 2 1/4 cups water, 2 tbsp. cooking oil or butter and the contents of Savory Rice Blend jar to a low boil. Stir, add in 1 lb jar of chopped or stewed tomatoes with juice if desired. Cover and reduce heat. Simmer 20 minutes until the liquid is absorbed and rice is tender.

Serves two as main dish, 4 as side dish, 6 if can of tomatoes is added.

for larger families (or appetites, or if leftovers work!), use 8 one pint jars instead, and fill with two cups rice mix. Double water and oil amounts on cooking directions.

a nice addition to a basket with this is a fancy cooking oil like grapeseed, sesame or a nice olive oil; often in organic section or healthfood store. A can of fancy diced tomatoes, perhaps the pre-seasoned kind that comes with garlic and herbs is a nice addition.

Eight Jars of California Corn Bread Mix

8 quart gift jars
8 small plastic zip lock snack bags or smaller

Mix in large bowl until evenly distributed:
16 cups Bisquick Baking Mix
4 cups yellow cornmeal
4 cups sugar
8 TBSP baking powder
16 tbsp dried whole egg powder (or equivalent of 16 whole eggs)

in another small bowl, mix:
1/2 cup dried bell peppers (multicolored is nice!)
1/4 cups dried onions
8 tbsp Chili powder

Put 3 cups of the mixed corn bread baking mix in each quart jar. Evenly distribute the California spice mix into 8 zip lock bags and seal, removing all air possible. Label Seasoning Mix and date. Place a small bag on top of bread mix in each jar, cover jar and then decorate to you preference as in first post, remembering to add baking directions:

Baking Directions:

Preheat oven to 350 degrees. In a 2 cup measuring cup, mix Seasoning Mix with 1/2 cup boiling water and set aside for 10 minutes. When dried vegetables are soft and reconstituted, empty Corn Bread mix into a large mixing bowl. Add water to the reconstituted Seasoning Mix to equal 1 1/8 cups. Add 2 tbsp cooking oil. Add to corn bread mix, stir together quickly until combined. Small lumps may be present. Pour into 8 inch greased pan and bake for 30 minutes.

For Plain cornbread, omit seasoning mix. You can use dehydrated buttermilk powder as part of the dry milk in the mix. Change your Baking Directions to omit the whole thing about reconstituting the veggies and just mix 1 1/8 cup water in instead.
I havent tried it to be sure, but 2 cups mix should work with 2/3 cup water in a small loaf pan, maybe 5 mins less baking time. Whatever size you use, you need 1/3 cup water for each cup of mix. A qt jar should hold about 3-4 cups plain mix, a half gallon jar should hold about 8 cups mix. You can greatly improve the nutrition by adding 1/2 cup golden flax seed meal, 1/2 cup soy flour and 4 more tsp baking powder to orginial dry bread mix. Use whole wheat or whole grain baking mix for half the bisquick if possible. Add 1 tsp of Tumeric to the basic mix for a brighter yellow color.

Six Jars of Spiced Tea Mix

6 1 cup gift jars

1/2 cup dried lemon peel
1/2 cup dried orange peel
2 tbsp ground cloves
2 tsp finely ground black pepper
1 tsp powdered nutmeg
24 small 3 inch cinnamon sticks, crushed into small 1/8 -1/4 inch pieces
3 cups loose tea leaves (half green and half balck makes a great mix)

Mix together until well distributed and put one cup in each jar, cover and decorate. A reusable metal tea ball makes a good gift with it in a basket, or buy the empty tea bags that you can seal closed with an iron yourself and make tea bags! Many healthfood stores have loose green and black teas that would go well in this, you can buy from the bulk bins, and buy just enough to make the mix. They may also have decaf loose tea if thats good for your intended recipient. Use 1 rounded tsp per tea bag, or cup, pour 6 - 8 ounces boiling water over the top. This doesnt really need directions attached, you could put the directions such as they are on a label on the jar if you prefer.

Oh, and one I really like- if you do go to the health food store, where you can buy loose Yerba Mate leaves- try substituing one cup of the tea with roasted Mate. (so youd have one cup of each green black adn mate teas- or any mix you prefer) To roast mate- heat oven to 400 degrees. Spread dry mate leaves in a large baking pan, about 11-14 or so. Place in oven, and leave door cracked open. Roast until its just starting to get a little brown around the edges, stirring occasionally so it roasts evenly. Very yummy! remove and cool before mixing.

Re: The Prepper's Twelve Days of Christmas.....

Re: The Prepper's Twelve Days of Christmas.....

I was thinking more of a silly song, my husband thinks I'm crazy, but I enjoyed this in my own little sing-along ...

"On the first day of Christmas, my true love gave to me.... an apple and a pear tree. (For our prepper orchard, of course.)

On the second day of Christmas, my true love gave to me...two work gloves, and an apple and a pear tree. (For all that hands on labor)

On the third day of Christmas my true love gave to me...Three cases of French cut green beans (instead of French Hens), two work gloves, and an apple and a pear tree.

On the fourth day...four calling cards (instead of calling birds)

On the fifth day...five bologna rings (gold would be nice, though!)

On the sixth day...six geese a'laying (not free range!)

On the seventh day...seven mask for breathing (at least N95)

On the eigth day...eight goats for milking (a maid to help do the milking would be nice!)
On the ninth day...nine tapes for dancing (a must have for pandemic entertainment)

On the tenth day...ten bags of tea for seeping (hard to find something that rhythmes with leaping!)

How about those stocking stuffers....a hand-cranked flash light/radio, swiss army knife, kid-sized flashlights, personal canteens, high protein snacks, even candy canes(they have quite the shelf life!), wool socks (boy, will the kids love me for them!)

And for the husband, he just wants a vacuum, odd, but true (of course its the expensive all house one, but it is his money!, and not really a prepping item though!)

And for my wish list...water! Lots and Lots of bottled water, I should add a filter system, too!

Merry Christmas!!

Re: The Prepper's Twelve Days of Christmas.....

AnneZ, the sentinel birds should not be eaten as preps but their eggs could and will be in my house.

I have one for the last refrain. 'And a wood stove to keep us all warm.'

And "two cords of wood" to go with that stove!
